Since opening in March 2009, we have consistently sourced only the finest A5-grade Ishigaki beef.
Ishigaki beef is auctioned only once a week, with a minimum of eight head, and a maximum of 15 head, being raised for fattening. The A5-grade Ishigaki beef used at Ishigaki Beef MARU is a rare breed, with only about three or four head per week.
At Ishigaki Beef MARU, we use the highest quality A5 grade Ishigaki beef every week.
We serve yakiniku that brings out the umami of the specially selected Ishigaki beef with a secret sauce, a unique blend of salt, and a delicious miso with a hint of fruit. Even on an island with the highest number of yakiniku restaurants in Japan (10.8 restaurants per 10,000 people), we work hard every day, aiming to be a restaurant that gourmets will want to return to!
We are particular not only about the meat we source, but also about the cutting and seasoning that are appropriate for each cut. We have personally eaten a lot of Ishigaki beef, repeatedly tasting it, and we are confident in presenting to our customers the deliciousness of our cuts and seasonings that we have personally experienced.
